I think the first decision to make is pre built vs DIY. The most common pre built solution would be something like Synology. You may start researching there and see if that would fit your needs, or what people do as alternatives.
I personally built one with a similar use case and use Unraid for my OS. The other normal option is TrueNAS.
With that budget you’ll be able to get a good result.
To prevent it using Internet at all, you can turn off individual apps access to WiFi and mobile data easily
To bind to a VPN, I use protonVPN, and I’m pretty sure the Android app has the split tunnelling feature to allow this as well. Not sure if that protects against leaks, but you could just have the VPN on all the time and use androids VPN settings to prevent any data usage outside the VPN

Yeah my daily driver for awhile has been Debian stable. All the normal day to day tasks can very easily be accomplished with only gui tools. My CLI stuff is more or less limited to ssh access to other machines and some light docker tinkering.
Elden Ring for sure. Lots of tools to help with difficulty, and you can leave and go somewhere else.
I did that exact thing and it is basically unusable. And that was before all network connectivity broke leaving it actually unusable. I also haven’t been able to flash the normal rom back so it’s basically a brick now.

I’m a prescriber in the US and the name that people will commonly use varies by drug and by region. It’s also influenced by whether that medication is even available generically due to patents (if that’s the right legal word) on medications being decently long when they first come out.
I agree it’s a mess
For allergies? Most people should start with a second generation antihistamine like Allegra or Claritin, they shouldn’t cause the same sedation like Benadryl does.
If you’re using benadryl for sleep, atarax can be a bit better, but if it is just sleep, I’d stop using any of them. It can be habit forming, fuck up your sleep hygiene, and long term use of anticholinergic medication may increase your risk of dementia in the long run.
This is incredibly generic advice and you should talk to your doctor about any concerns you have.

Are you using the binhex image by any chance? I had this same problem, just had to update it from the apps/community center page instead of from the docker page.
