I went with bookstack. Simple to use and does exactly what OP is asking. Tailscale to connect so it isn’t public at all. Works great for me.

If they end early it is because they ran out of supplies, and if they run it longer it is because they have too much. No one is trying to be a dick, or be nice. It is just inventory.

There are lots of docker deployment examples, and no reason it shouldn’t run in docker on windows. It supports Ubuntu containers. https://docs.docker.com/desktop/wsl/
