have you looked at the color e-ink tablets? A cursory look reveals the boox air3, which might be a good fit for your use case

in all seriousness though, Spice And Wolf (Ookami to Koushinryou) (both the OG and remake) is very good, and worth your time. other good ones are Legend Of The Galactic Heroes (Ginga Eiyuu Densetsu), the OG Gundam, “GUNSMITH CATS”" (yes, it is all caps, don’t ask why, we don’t know lol), “TRIGUN” (another all caps one, its stylistic), along with it’s sequel, “TRIGUN STAMPEDE”, Kill La Kill, and of course, the ever-classic Uchyuu Senkan Yamato (I think the romanization was " star blazers" or something? I watched the OG JP back in the day, don’t remember how it got localized to America) and MACROSS (the western title is “ROBOTECH”, if memory serves. don’t recall why they went with that title though)
