Obviously there’s a small handful of things that would require a reboot, but unlike Windows, the vast majority of programs in user space don’t require reboots on update.
There’s also the fact that restarting Windows to update is a much slower and more disruptive experience than restarting Linux.
The manufacturer obviously also makes the app and can control the encoding.
You don’t have to take arbitrary bytes. UTF-8 encoded strings are just fine and easily handled by libraries.
At minimum you need to limit the request size to avoid DOS attacks and such. But obviously that would be a much larger limit than anyone would use for a password.

My pixel 7 pro is perfectly smooth and seamless. Oh and voice assistant is far faster than anything on iPhone thanks to the on-board Tensor chip.
Umm, you can do that on any device. It’s called Google Meet, Zoom, Discord, or any other countless othe video chatting applications out there.
Apple software is pretty overrated no matter if it’s iOS or macOS. I use a MacBook for work and I use exactly zero Apple apps because they just aren’t very good.
It’s perfectly stable. Linux just generally attracts people who like to tinker and tweak things, in particular because it’s much easier to do and gives you a lot of power and flexibility in making the machine your own.
My laptop running Arch Linux has remained problem-free for the last 6 years or so since I installed it.
The software is pretty overrated. Especially safari, which is a legitimately terrible browser and has been for a long time.

Chromecast. That’s what I do. TV with no wifi, Chromecast for content.
I’m in the US with an Android and have never actually encountered this, only heard about kids bitching about it. Adults definitely don’t give a shit. It’s very childish behavior.
It’s speed, but it’s also flow and a continuous stream of thought. If all your editing is being done with muscle memory and minimal thought, you can continue thinking about the problem at hand rather than interrupting your thoughts process to fumble through some context menu to make a change.
